Perfectly Refreshing Cucumber, Strawberry, Feta, Mint Salad
Feed those sweet cravings with something healthy
I’m far from a health nut, but I try my best to add a little bit of the good stuff into my daily meals when I can. When I was pregnant I had the pleasure of being diagnosed with gestational diabetes, and I think it had a great impact to my overall (lack of) weight gain and ease of weight loss. I learned a lot about what I should be eating and what to stay away from. I’m pretty sure my taste buds took on some new flavors and cravings that did my body good. Don’t get me wrong, I still over indulge on Oreos and pizza every now and then, but to my surprise, I’ll crave some pretty healthy stuff, too.
I found this recipe on Pinterest while searching for “healthy meals” when I was craving something refreshing. What is more refreshing than the taste of mint?! I’ve seen recipes like this that included watermelon and feta which sound delicious as well, so I immediately ran to the grocery store (Ha! Who am I kidding, I logged on to Shipt and had someone else do the dirty work!) bought the ingredients, and whipped this bad boy up! My mouth has never been happier! These flavors blend together so well. It’s best served cold, so make sure all the ingredients get a little fridge time before you eat.
- 1½ lb. strawberries, quartered
- 4 c. cucumbers, chopped
- 1 small red onion, chopped (No onions for me)
- 8 oz. feta cheese, cubed
- ½ c. fresh mint, minced
- ⅓ c. olive oil
- ⅓ c. golden balsamic vinegar
- 2 Tbsp. lemon juice
- ¼ tsp. pepper
I tried to make this easier for you, but seriously, it can’t get much easier than this.
- Combine all salad ingredients in a bowl
- Combine all dressing ingredients in a bowl or dressing container and mix.
- Pour dressing over salad ingredients
